Coconut oil is wonderful! What about whole eggs? If you like cream in coffee or tea, the whipping cream is great as it has more fat and flavor... can you have chia seeds or pumpkin seeds?

Have you talked to a registered dietician about your allergies?
Avocado is a good source, olives themselves, seeds, flaxseed.
Given the extensive nature of your allergy, I think a dietician would be best equipped to help craft a diet that has the fas you need.
