Add some chia seeds, those are good for protein, or the egg idea was good!

Zucchini fritters plus a 'fried' egg or two on the side sounds really good. Have you thought of making a frittata? Its basically a baked egg casserole where you mix pretty much whatever you want plus 6-9 eggs and bake it. I make one and it lasts for dinner for the whole week.
Morning! Anyone have any good ideas on what to serve with zucchini fritters for dinner tonight? I've tracked up until dinner and I need a little more protein to hit all my requirements for the day. The zucchini fritters are basically zucchini and carrot held together and made into patties that are pan-fried. I was originally going to make them with a vegetable but then came the protein snafu. I have some pine nuts I could make with them, and milk and eggs. I also have some linguica but I'm not sure how that would match. Any ideas? Thanks in advance :)
