I just made a batch of the light lemon blueberry doughnuts. They were a little fragile; I think next time I will use a little more batter per doughnut

I was really happy with it two. And I actually think I have most of the stuff to make it (I know I have to pick up a lemon and some baking soda and baking powder, but the rest of it I have). I'm going to give it a try probably this weekend so I can drop one in my bag for an afternoon or mid-morning snack between classes.
I seen it this morning too! I am thinking of making it for my class some Sunday morning when it's my turn for snacks. Everyone else brings donuts that have as many calories as a whole meal! (which is why I take my own snack!)
