How about a stir fry? Boneless skinless chicken, pork tenderloin, or lean beef like sirloin or top round cut into thin strips...add veggies like bell peppers, mushrooms, snow peas, carrots, and broccoli with low-sodium soy sauce,low sodium broth, sesame oil, and chili sauce if desire..add seasame seeds that help your arteries stay clean.
Make chili but use Jennie O 97% Fat Free Ground turkey instead of Ground beef...it tastes the same ...freeze in small containers...heat and eat.
Substitute low-fat ground turkey for ground beef and make a turkey meatloaf...freeze slices in a container with a little gravy....To stretch the recipe ...mix plenty of chopped and sautéed onions, carrots, bell peppers, mushrooms, or other vegetables into the turkey....steam some green beans or broccoli.....instant dinner.
Trader Joes, Has Jalepeno chicken links, no preservatives, 100 calories each Just zap in the microwave for a minute as they are pre-cooked. Good on a slice of toasted rye with mustard or horseradish and even chopped red onion.
For a snack that is loaded with vitamins and minerals... pop some air-popped popcorn...3 cups under 100 calories...add some parm or cinnamon as a topper...easy to make...easy on the budget.
