I give you a lot of credit for working so much. I hope though it is not for too long. Some ideas Nut butter or whole grain bread or wrap/fruit Veggie burgers or veggie chicken Tofu stir fry Hummus and veggie wraps If you don't eat dairy having soy milk or soy cheese
Slip beans into everything, veggie soups, stews, veggie chili. You can even make black bean brownies. Make your own hummus without the oil and use it as a spread on veggie sandwiches. If you eat dairy then greek yogurt and cottage cheese help a lot. Good Luck
beans [you can buy bagged, cook and freeze in individual portions for ease], grains [whole grain pasta, quinoa, etc], legumes [lentils are awesome], nuts, seeds, tofu, any dairy product [cottage cheese, yogurt, greek yogurt, milk of any nature].
