When cooking Cajun food in my home state of Louisiana, we start with a combination of onion, celery and green pepper diced and sauted. Add in chopped tomotoes and any other vegetable like squash, green, beans, or okra and you have a great dish.
I like to cook different vegetables together. Which combinations have you found that work well? I've roasted grape tomatoes and mushrooms together. Tastes great. And I know onions and garlic go with anything. Any other ideas I could try?
