Chickpea & Tomato Salad
Toss together 1 can of drained chickpeas with 3 cups of freshly chpped tomatoes.
1/4 cup of fresh dill, and 1/4 cup of fresh basil both chopped
2 Tablespoons of Olive Oil and 1 clove of minced garlic
Let stand 15 minutes, then season with a sprinkle of sea salt optional and some pepper.
Chill Makes 4 servings.

Garlic Sesame Spinach (this is so good)

1 st spray pan with Pam or similar
4 fresh garlic cloves, minced
1/4 tsp of red pepper flakes
1lb of fresh spinach, stemmed and lightly washed
1 tsp of seasame seed oil
2 tbs. of sesame seeds
1/4 tsp of kosher salt (optional)
1.4 tsp of ground pepper

In a large skillet heat oil garlic and red pepper flakes and saute 30 seconds. Add spinach and use tongs to stir fry about 2 minutes or until the spinach wilts. Add sesame oil cook for a minute. Spinkle with sesame seeds, the salt and pepper. 6 carbs 90 calories. You can add red or green peppers for variation

Easy Tacos
Stuff shell with hot refried beans...1 can green chili's (optional)
chopped onion, drained sweet corn kernels, shredded lettuce, salsa and a dollop of sour cream
Or just use some left over spaghetti noodles with the sauce and fill the taco....it's really good! Try tuna or salmon tacos too! Breakfast taco, scramble egg with green pepper and onion, Stuff the taco with mix and lettuce and top with chopped tomaoes or salsa...Have 2

How about black beans and sweet potato casserole?

NO MEAT SLOPPY JOE

1 tablespoon olive oil
1 small chopped onion
4 ribs chopped celery
2 large chopped carrots
1 small chopped green bell pepper1 clove garlic, minced
1 (14.5 ounce) can diced tomatoes UNDRAINED
1 tablespoon chili powder
1 tablespoon distilled white vinegar
1/4 teaspoon ground black pepper
1 (15 ounce) can kidney beans, DRAINED & RINSED

Heat olive oil in a large skillet over medium heat. Add onion, celery, carrot, green pepper, and garlic: saute until tender
Stir in tomatoes, chili powder, ketchup, vinegar, and pepper.
Cover, reduce heat, and simmer 10 minutes.
Stir in kidney beans, and cook an additional 5 minutes. Serve ontop 1/2 cup of brown rice.

I like to keep things simple. Some easy-to-cook/prepare main courses within your parameters are:

salads
omelets
quiche
loaded sweet potato

I am far from vegetarian, still i make these sometimes:

SPINACH QUICHE
Small onion, chopped, 2 1/2 ounces
1 tablespoon butter
9 ounces frozen chopped spinach, thawed drained well
5 eggs, beaten
1/4 teaspoon salt
1/8 teaspoon pepper
12 ounces cheese, shredded

SautÚ the onion in butter until tender. Add the spinach and cook until all the moisture has evaporated. Put the cheese in a greased 9x9" pan. Add the spinach mixture and gently mix into the cheese. Beat the salt and pepper into the eggs; pour evenly over the cheese and stir to combine all of the ingredients. Bake 350║ for 30 minutes until set.

I've been a vegetarian for 15 years, but I've never been very much of a cook. I want to learn how to cook healthy recipes, but I'm not sure where to start. What are some quick easy recipes that I can start with that won't be too daunting so I can start making meals that aren't out of a box?
