I love a light lunch when it's hot out... a caprese salad (sliced tomato, fresh basil, and light mozzarella in layers with a little balsamic/evoo dressing and pepper--I'll sometimes add crusty baguette slices as a layer if I'm in a hurry), a 1/2 cup of hummus, a little cut-up pita, baguette, or thin crackers (if I didn't add bread to the salad) and cut-up vegetables. I also make another dip (smoked red lentil or white kidney bean and herbs, usually) if I have a little extra time. If I'm not working I'll also bring an individual-sized tetra-pak of white wine as a treat ;)
1/2 cup Cottage Cheese and a handful of Matchstick carrots, flaxseeds around 75 calories or cheese with chopped onion and parsley flakes.
1/2 Avocado with stuffed crabmeat 4 ounces crabmeat with a tad of mayo on a bed of lettuce about 6 carbs
A cold shrimp salad or spinach salad with strawberries and walnuits...take along a small container of vinegar and oil dressing.
Take along taco shells in a separate baggie, have conatiners of shredded shicken, pork or beef, shredded lettuce, salsa or chopped tomatoes or wahtever....and fill the tacos in the car.
A cold pork chop with a cup of cold applesauce and a cold 3 bean salad., or chicken legs, sliced cucumber chips, and an apple which will provide energy.
Celery sticks stuffed with low-fat cream cheese or Cubes of lean ham or turkey breast... good along with a pear or cherries. Turkey made into rolls, black olives stuffed with reduced fat cream cheese, an apple or plum, 4 walnuts...add 1-ounce mozzarella cheese stick for calcium.
Chickpea and tomato salad or a kidney bean salad....

I used to have frozen things in the freezer and would put them into hubby's cooler bag - they would thaw out during the day and stay safe. Other times I would make sandwiches with frozen bread and put various fillings in them. I would be a drink bottle in the cooler. I would 1/2 fill it with water the night before and top up with out the tap water in the a.m. That way he could drink the cold water and it would keep the food cold, too. Another thing I would do was have little pots of yoghurt in the freezer and pop that into the lunch box. Frozen healthy muffins or healthy make-over pizza is good, too. By using this method, you can have a week or more's worth prepared all at one time - then it is just a quick 'grab'n'go' in the a.m :-)
Other things you can do - little can's of things like Tuna, Salmon, Chopped Chicken, etc. and put in a salad. That way it doesn't matter if it gets warmer - it is safe because it hasn't been opened. Make sure that there is plenty of fruit.
I really need some ideas for lunches I can take my husband at work. I have a carry cooler, but I am just running out of ideas. We both have a very busy schedule and no way to heat lunch up. 30 minutes lunch for a twelve hour shift leaves little time. He works in a warehouse and we sit in the car or go down the block to the park for lunch.
