Put them in a freezer zip loc bag and throw them in the freezer. You can do that with whole eggs (and I do) so I'm assuming egg yolks are no different.

Later, poach them in some simmering salted water. Drain. Mash and add a little mustard, stirring, then a little lemon juice and/or vinegar, and finally some oil that you like - olive oil, for example. Keep stirring and see if you can keep it creamy. Then use this dressing with some tuna or on a salad or whatever needs dressing. Season it as you like.

You can use beaten egg yolks as a face and / or hair mask (add a little olive oil for extra moisturising, and essential oils for fragrance).

I was wondering about this with Egg Whites. I have a cookie recipe and it calls for egg yolks. First off can you substitute the whites instead? Can I freeze the egg whites.

When I use the whites only, I place the yolks in a plastic ice cube tray and freeze covered for later use.

I still buy eggs for my husband but in general I just buy the carton of egg white only as they taste the same and I think it tastes just the same especially when putting salsa on top anyways. When cooking i use that as well and it's a lot faster and less wasteful.

mayonnaise is the common thing to make with left over egg yolks.
You can freeze them (in an ice tray and then into a freezer bag.
hollandaise
lemon curd...
Great with scrambled egg

Or add a bit of water and use as an egg wash for pastry etc

if I don't eat them, I do in my fried or scrambled eggs. I give them to the cat or dog, they love them. Plus we get fresh eggs from a friend so they are uber healthy compared to regular store bought.

My mother always made noodles with her egg yolks left from Angel Food cake, you can dry and freeze them....or you could scramble them or make omelettes

I LOVE the idea about the yokes and olive oil in your hair! I will try that! I also feed a couple a week to my pups to help with the waste. :) and then lucky for me, my chickens LOVE their own eggs when they are cracked {gross} lol!

The easy way is to buy a package that is all egg whites for this sort of thing. I see them at costco, and then you don't have to worry about the problem.

However, you probably already have them.

Here are a few ideas:

Do you have dry hair? Try beating 2 egg yolks and adding a bit of olive oil. Rub into your hair and leave for 20 minutes.

Do you have a dog or cat? I've yet to see one that didn't like eggs yolks and it makes their fur shiny.

You might try making lemon curd...

Unfortunately most of the recipes I know of that use yolks only are not that healthy.... mostly custard desserts like creme brulee, ice cream, and pie filling, or for something like homemade mayonnaise. Sorry, hopefully someone else will have a brilliant idea, because I run into this problem and usually end up throwing them out.

So today I am baking an angel food cake. It uses 1 1/4 C egg whites, but what shall I do with the egg yokes? I would rather not throw them out.
