I would try adding a different protein into it to swap it up a little. Chicken, Turkey, or Tuna are great. You can make a sandwich with bread or put it in a wrap for a different type of sandwich.
It is also a good way to experiment with different seasonings to add. Take a couple of tablespoons of potato salad and try seasonings that you wouldn't normally use with it. You can be surprised by what you find works.
If all else fails you can freeze some of your left overs.
