A restaurant near my house uses it on the bottom of their greek salad and it is fantastic. They just put it on the lettuce then build the rest of the salad on the top.

I'm just thinking out loud here..

but mash it up- and make it into meatball sized balls and dust it with a little flour, bread crumbs or corn meal mixed with some parmesan cheese -and bake it til it gets toasty brown for some potato croquette type things...

I would try adding a different protein into it to swap it up a little. Chicken, Turkey, or Tuna are great. You can make a sandwich with bread or put it in a wrap for a different type of sandwich.

It is also a good way to experiment with different seasonings to add. Take a couple of tablespoons of potato salad and try seasonings that you wouldn't normally use with it. You can be surprised by what you find works.

If all else fails you can freeze some of your left overs.

I made a lowfat Potato Salad a few days ago and have a ton of leftovers. Any ideas on what to do with it? Unique recipes, etc?
