Extra virgin olive oil, but not for cooking - I use it solely for salad dressings, drizzling over foods; organic virgin cold-pressed coconut oil which is fine heated (you'll likely get some disagreement on this one); ghee and/or organic unsalted butter. I also occasionally use walnut oil in my homemade mayo and of course avocadoes contain some of the healthiest fat too. I personally do not believe canola, soy, peanut, or any vegetable oil is healthy.
