Any Mexican food or seafood, especially crab, scallops and salmon.

2 Chicken Tacos with lots of salsa.
Side of refried beans.
Side of rice.

Crab legs (one big one or two or three small ones.
Risotto or pasta salad.
Side green salad.

We had a nice dinner with stuff I had in the pantry and freezer last night.

We had pork carnitas that I bought already prepared at Costco.

Uncle Ben's Country Inn Oriental style Rice

Lesuers very early young peas

I ate half a serving of rice.

I ate a full portion of the pork and peas.

I have a kitchen scale so I weighed my food.

It was really good.

For an bedtime snack I ate 1/4 of a serving of the rice with a cup of organic chicken broth.

I slept like a baby last night.

I've been on a sweet potato kick recently, so I throw one in the microwave, then chop up some spinach, onion, and turkey and throw it in the skillet to brown and saute, then mix it all together.

Or I go classic with 2 scrambled eggs, turkey, tomato, and have it on a wrap or slices of bread.

Everyone has shared some taste dinner ideas. Such a variety of delicious options! I like HAPPYJAY's answer the best "anything with people I love". for hot weather I like a nice mixed green salad, with cucumbers, grape tomatoes, tossed in a olive oil/balsamic vinegratte with grilled chicken, shrimp or fish on top.

or Mexican fajitas with bell peppers, red onions, and zucchini and grilled chicken, shrimp or fish

or stir fry of sliced Portobello mushrooms, red bell peppers, broccoli, zucchini, and grape tomatoes with drizzle of teriyaki and sesame oil.

Brown sugar chicken w/ maple mashed sweet potatoes and a veggie. We had sauteed squash and zucchini. Both recipes I found here and they went really well together! Quick and easy too!
