Holy Guacamole! I just found the 100 calorie packs and they are so convenient. I think of it as a substitute for mayonnaise on sandwiches and as a tasty appetizer with whole grain tortilla chips for lunch. Yum!

My all time favorite is so simple, Caprese salad. Tomatoes sliced like for a sandwich and slices of fresh mozzarella,lay on a platter, sprinkle with fresh basil and drizzle some olive oil over it!
I also like grilled corn, grilled peppers, grilled onion. Once cooked and cooled, cut the kernals off the corn, dice the rest of the veggies, add diced tomato, a dash of salt & pepper, dash of paprika,a pinch of olive oil and a splash of lime juice. It is so good! You could kick it up a notch by adding some cayenne pepper! I serve mine in mason jars!
I like grilled shrimp with tzaziki. You can skewer the shrimp with fresh veggies of choice (cherry tomatoes, chunks of eggplant, shallots, red bell pepper, or zucchini), marinade in a vinaigrette sauce or use low-cal bottled dressing (I like Newman's Own Low-Cal Balsamic Vinaigrette), serve with tzaziki. (a dip made with Greek yogurt mixed with chopped or pureed cucumber and garlic, a teaspoon of EVOO (Extra Virgin Olive Oil) salt and pepper to taste, a squeeze of lemon or lime). Add a few toasted pita triangles and you have a great appetizer! Add a salad and you have a nice light summer meal. End with fresh berries spooned over mascarpone mixed with sugar to taste and a teaspoon (or less) of real vanilla extract. MMMMM...

Hummus or salsa are two of my favorites. If budget isn't an issue and you have a tray you can fill with ice to set the platter on, shrimp with cocktail sauce is another. (Then you have an entree if everything else is high cal!)

LF spinach dip in bread bowl 10 oz frozen spinach thawed 1 1/2 c plain greek yogurt 1/4 c fresh chopped dill 1/4 c chopped parsley 1 tbsp lemon juice 2 tbsp chopped scallion 1 loaf round pumpernickel loaf or bread of choice
Drain spinach and squeeze liquid,chop finely Mix other ingredients in large bowl and add spinach Put in refrigerator for at least an hour Remove inside of bread and cut inside into pieces. Place dip in center of bread bowl and serve with cut up bread
My favorite go-to has become any number of quinoa salads. They are light, healthy and YUMMY... and no mayo to worry about. SP recipes has one with black beans, corn and lime-cilantro vinegrette. In one of the last Food-TV magazines there is an ad for Pompei EVOO for a lentil and quinoa salad with mint, ginger, wine vinegar and some other seasonings that you toss with mixed greens that is outstanding! I'm bringing a big batch of it to my family reunion next month and don't expect to bring any home!

grilled shrimp salad
season one bag of shrimp (shelled already) size of shrimp on your preference one to two fresh lemons squeezed (minus seeds be careful) salt and black pepper fresh dill (couple of springs chopped fine)
put on grill in either a grill pan or a shish kabob skewers cook until opague and pink if no grill put in broiler in oven
let shrimp cool
make a sauce for shrimp 8 oz of low fat sour cream on non fat plain greek yogurt one lemon fresh squeezed black pepper and salt fresh dill ( couple of sprigs chopped fine) one half of small cucumber (deskinned and chopped super fine) mix all together make sure shrimp are cooled and add shrimp to sauce
serve on whole wheat crisps, tortilla chips, pita pockets etc.
