Left overs! So today it's tex-mex casserole (

for dinner. Both good, but I'm a little tired of them by Friday. :)

Since November, I've been making meatless dinners on Monday, Wednesday, and Friday. Tonight, I'm doing fish, though, and falafel.

We don't eat meat on Friday, so our lunch is usually egg, salmon or tuna sandwiches. Dinner will be fish or a vegetarian chili.
