Leftovers, often.

One thing I did a lot in the summertime when my husband grilled just about every Sunday was have him grill some extra steak/chicken/whatever for me to put on my lunchtime salads during the week. I just bagged it up in 3 oz. servings. If I had time, I'd bring my own salad from home -- if not, I just brought the baggie with the protein serving in it and added it to a salad from the salad bar at my work cafeteria.

I love peanut butter, so it is usually pb on a piece of bread and either an apple or a banana.

Today I packed half a chicken breast with sour cream sauce and a bit of polenta.
I try to eat a hot meal at lunch, so that I can eat something light in the evening

I usually pack a salad, half peanut butter (low fat) on reduced calorie bread sandwich, reduced fat cheese stick, and apple. I pack the same thing most days because it is easier.

I also bring dinner leftovers for lunch the next day. I like to bring soup, I make a pot on the weekend. In a pinch I bring the Kashi meals, they are pretty good.

Usually two servings of fruit (chosen among grapes, apples, pears, bananas), 1 oz of string cheese, lowfat yogurt, and 1.5-2 cups of homemade soup. (This is for lunch and a snack or two.)

It really depends on the day, but I usually bring leftovers from dinner the night before (I split my dinner in two and eat just half of it that night). I like tuna a lot, so either a toasted tuna sandwich a salad with tuna in it. I like fruit a lot too. I usually bring something like that along with my lunch if I can too.

Hi there! I am struggling with packing healthy lunches during the work week... in the past I usually run to panera, but that's not always low calorie and I need variety!
