Another way I like to eat it is just in a quick summer salad. I do diced red onion, black beans, diced tomato, fresh cilantro, cubed avocado, toss it all together with some fresh squeezed lime juice, salt and pepper, and it's delish.

Talk about fate! I have this page opened up on another tab about the plenty of ways you can use avocados in recipes - and they're pretty inventive with it! Today I put slices of avocado in my turkey sandwich, and it was absolutely delicious. It's one of my favorite foods!
You can make a Chocolate/Avocado Mousse - and don't laugh, it is great :-)
I love Avocado with chicken or bacon, on a sandwich. My daughter uses it sometimes with a little garlic, chickpeas and lemon juice or lemon pepper to make a good hummus

I keep it simple...usually just spoon it out of the shell and eat! Love to do a half a one with shrimp cocktail in it too. I also chunk it up and toss on salads, slice onto eng muffin w/cheese for lunch, stuff slices into tacos.
I have found I need to slow down a bit...so my usual limit now is 1/4 avocado at a time! And, they have to be ripe!! (or they are bitter...) So if mine are too firm, they get set out on the counter for a day or two... patti

Avocadoes are my nemesis...I eat 2-3 a week.
I smush them up, squeeze a little lemon juice on them and some salt and pepper, hot sauce, or cayenne pepper. I either do that on toast or slice up some veggies and dip them in the smushed avocado.

I stuff them into wraps, dice on top of salads, etc. Or I just slice one up and eat it plain.

SUNSHINE6442 I just read your post, and it was close to snack time, and sounded pretty darn good.
So I took my avocado (I keep them frozen in the freezer. I cut in half, spray with lemon juice, flash freeze, then put them in a freezer bag)
So anyways, I took my avocado, defrosted, thawed out some crab meat, mixed it together with little balsamic, little olive oil, some garlic and onion. I meant a little s&p but forgot. Wrapped it up in some lettuce. I just made a little, incase I didnt like it. OMGosh, I want more!

I make kale-avocado salad (this recipe, except I don't mash the avocado as thoroughly as their instructions suggest, and i use a couple drops of sesame oil instead of the seeds) www.wholefoodsmarket.com/recipe/kale-carro t-and-avocado-salad .
