I have a spinach salad with the egg chopped up in it. I include another vege usually peas, cucumber or cherry tomatoes. A couple almonds (8) and a teaspoon of olive oil. It is higher fat but healthy fats. If my fat is already high for the day, I skip the olive oil. The egg yolk and tomatoes work like a salad dressing.

An egg is protein...always pair protein ia carb to balance blood sugar...how about 's one Van's 97% Fat Free WAFFLES @ 120 CALORIES...either slice up the egg or make a soft boiled one and top the waffle for moisture....
