I know my dinner will contain a chicken breast & a salad. Right now, I'm thinking a blackened cajun chicken breast with a caesar salad. This might change to be some sort of taco salad with a salsa dressing, as I have to stop at the grocery store on my way home to pick up supplies.

Edit...nope, changed my mind. Now, I'm planning chicken with green beans and peanut butter sauce. It's time to try something different!

Chicken noodle soup, with leftover roasted chicken from last night, and fresh chicken stock made from the carcass (overnight in the crock pot - my house smells amazing!). Since soup never fills us up, I'm also adding egg salad sandwiches to the mix.

Chicken Kabobs.... chicken is marinating in yogurt, some olive oil, oregano, and lemon juice. Grilled Asparagus. Yellow Rice.
Currently working and going to grad school. Given my stress level and time constraints (and with my doctor's blessing), I'm not trying to lose a lot of weight, just be healthy and not gain. Once I get my degree I'll pick things up again.
