I usually have a green smoothie or salad for breakfast.
Last week and this week I'm eating more cooked foods ...
Breakfast is usually an egg scramble with veggies. My favorite combo is with bell peppers, onions and tomato. But I'll also do broccoli, cauliflower* and zucchini. Mushrooms are always great to add. You could also do potatoes, onions and peppers. Or cactus, tomatillos, and anaheim chili. Sometimes I'll just use any leftover veggies we happen to have, warm it up, then add the eggs.
I'll also often use chicken or turkey in it - when I've roasted a whole turkey I often add diced turkey to the egg scramble or use chicken breast for more protein with less fat. I normally make a 3 egg scramble but if I add meat, I cut it down to 2 eggs and add 1/4 cup pre-cooked meat.
And topping with salsa, guacamole or avocado or cheese is yummy ... and sometimes I'll put baby spinach on at the end just until it wilts.
You can use any veggies - I've had omlettes with eggplant, asparagus, corn, jalapenos, beans, all kinds of things.
Or make huevoes rancheros ... heat a tortilla until soft, top with black or refied beans, top with a fried or poached egg (runny yolk is the best), and salsa, guacamole, cheese, and sour cream to your tastes. YUM! If you want it crunchy, heat the tortilla in the oven until it's crispy. I bet a pita would work well too.
* Whenever using caluliflower I found it helps to cook it partway through first as it takes a long time to get tender. So I cut it into a small dice, then microwave steam it until it's about half done, then sautee it with the other veggies.
Oh, and I'm a big fan of leftovers, sometimes I'll reheat leftovers, or make a chicken or tuna sandwhich, or a vegi sandwhich / wrap.

Eggo Waffles low fat nutri grain (2), topped with a flavored yogurt, flax seed and frozen fruit heated up gives you some juice to soften waffles. I keep bags of frozen fruit in freezer they are great for oatmeal, waffles, smoothies. Fresh fruit goes bad so quickly and if i do run out i alwayes have the frozen on hand. I even freeze bananas too.
I have the same most every day, 1/3 cup All-Bran Bud Cereal with 1/4 cup Fresh or frozen Fruit, 1/2 cup 2% milk and sometimes 1 tsp. granulated sugar, 1 - 1/2 cup black coffee. Never used to eat breakfast.
