i make several different colors, cube them up and layer them w/ light cool whip. the kids think it's awesome, and it breaks up the monotony of plain old jello

I was going to say the same recipe that JMFOGARTY11 said. I've only had it with Orange Jell-o though. It's good with Celery, pineapple, and pecans. My mother-in-law introduced me to this. It's only few calories, and very good. emoticon

I just made raspberry jello with fresh stawberry slices, cut up celery and grated carrots. It is good.

Saw some of the posts and will try it with cottage cheese next time.

Today I tried out one of those 'crustless strawberry pie' recipes and it turned out really well. It used a little box of cook and serve sugar free vanilla jell-o pudding, and a little box of the sugar free strawberry jell-o and a pound of strawberries I chopped up.

I used 1 cup of milk and 1 cup of water (you can use 2 cups of water instead to cut calories, but I was hoping for more creaminess) to prepare the vanilla, then add the strawberry and mix it up and set it aside to start cooling. Put all the chopped up strawberry pieces in a pie dish and pour your mixture over them.

I was very happy with the results. It's almost certainly something I'll make again sometime.

To make a jello pudding....
Take a package of sugar free jello, any flavor.
You use the hot water as instructed but replace the cold water with fat free plain yogurt. Refridgerate as usual. It is good, low calorie and good for you.
Enjoy.

Low fat Jello pie - this makes 2 pies

1 (12-ounce) container low-fat (1 percent) cottage cheese
3 (0.3-ounce) boxes sugar free strawberry Jello,
2 ready-made light graham cracker crusts
fresh strawberries, plus extra for garnish
1 (8-ounce) container fat free Cool Whip, thawed

Put cottage cheese in a blender.

Make 2 boxes of the Jello, using 1 cup of hot and 1 cup of cold water.

At once, before it jells, add to cottage cheese. Blend until smooth. Pour evenly into crusts and refrigerate until set.

Cut up fruit and place on top of pie.

Make remaining package of gelatin as per instructions on box. Pour it on top of fruit and put it in refrigerator until set.

Put whipped topping on top. Garnish with more fruit and enjoy !!

Use your imagination and use different flavors with different fruits !

1 lg carton of FF cottage cheese - mix with 1 small pkg of favorite flavor of SF jello add in 1 small can drained crushed pineapple and mix in 1 carton whipped topping reg, SF, Light or FF...this helped me like cottage cheese when I was in jr high....

Lime jello (sm SF) 2 cups boiling water (I usally nuke in a 4 cup glass measuring cup with the jello in it but you have to watch it doesn't boil over). Add 1 lg pkg light cream cheese(softened) to a mixing bowl(big enough to mix & use to set) & slowly beat in jello add 1 can of drained crushed pineapple and put in fridge to set.

You can change up flavors and fruits/veggies/nuts to see what your favs are.

Have fun!

Jean-Marie

I love JellO active pudding. Gives me my chocolate fix but doesn't make me feel guilty.

I love Jell-O! Especially the sugar-free Jell-O, it tastes great and so low in calories. I also like to make desserts with Jell-O and was wondering if anyone out there has a great one that you would like to share? emoticon
