I'm not in love with the "restrict/reward" paradigm of dieting, but as for the weight loss itself, there's nothing there that sounds abnormal or like a problem. (Check your actual calories, though, if you're not doing it arleady. It's possible you're eating a lot more than you think you are.) 7 pounds in the first week is not possible to come all from fat; it's mostly water -- probably a combination of reduced sodium, perhaps reduced sugar or carbohydrates, perhaps hormonal issues contributing). So you gained some of that water back when you changed your diet again, back to more like you were before.
If your calories are in the right range, expect roughly a pound a week loss on average. But if the cycling is causing water weight to fluctuate a great deal, it could easily take you a month or two to be sure whether or not you are truly losing at that rate, or much faster, or much slower (or not at all). If you're committed to this method otherwise, and reasonable confident that your total weekly calories are in line with what they should be, then there's nothing for it but to be patient and not take any given day or week's weighing too seriously.

I don't have any insight, but I have to say that this is why I am afraid to try carb cycling. Even one day of normal eating (full meals with carbs, nothing crazy--I love Vietnamese noodles too) and I will gain back everything I have lost in a week.
I wonder if people who have done carb cycling could comment.

Healthy weight loss averages 1-2 pounds a week. And often, in the first few weeks of focusing on healthy eating, you may drop more.
Your weight naturally fluctuates 3-5 pounds a day. It may help to weight yourself weekly at the same time using the same scale.
Also, you may want to make your nutrition page public. That way, if you do have questions SP members can look at it and give suggestions.

I am just about finished my second week on the Classic Carb Cycling and the first week was great! 6.8 lbs down. I had my reward day and was up a few lbs but it has taken until today to get back those 3 lbs down! Is that normal? I can't say that I went overboard with the reward day. I went for vietnamese and had the vermicelli. And ice cream later. Now I'm scared to do tomorrows reward day for fear I will be up…
One the other hand, I've been drinking lots of water, which is new for me. My hope is that the water is just retaining from being so dehydrated…Cross fingers. :)
