I'm a vegetarian and I look up to vegans and fruitarians a lot. I wish I could control myself enough to become vegan again, maybe some day in the future. I tried veganism once, but only stuck with it for about 6 months.
For me, fruit is pretty self-regulating. I eat mostly veggies and fruit and I'm able to eat until full without having to worry about my weight fluctuating. In order to gain weight eating mostly veggies/fruit I'd have to eat until I was in pain.
Veggies and fruit have low calories for their volume. Most people would be full before getting too many calories.
Obviously if you're diabetic or have other issues along the same line you may need to factor in the sugar content of the foods you eat.

Healthy sugars? There are really no difference from the sugars you get in that Snickers bar and the watermelon. The difference is quantity of sugar. Watermelon has way less sugar per serving than that Snickers bar.
I am one of those low-carb people. I try to get most of my carbohydrates from vegetables. But....even I love eating watermelon. Now I eat 1/16 of a watermelon at one sitting instead of the 1/2 watermelon I used to eat. I also go for berries, which are relatively low in sugar compared to most fruit. I consider it and all fruits to be 'treats' to enjoy on a fairly regular basis but to not use as staple foods. I go for veggies more to get that part of my diet taken care of.

Believe it or not, watermelon isn't terribly high in calories since it's mostly water. And it's got lycopene, a great nutrient found in red fruits and veggies, as well as healthy sugars. If you're having fruit for dessert instead of something less healthy, I say eat watermelon whenever you want it! Fresh melon is great when it's in season.
I've been getting local melon from the farmer's market. I just chopped up a "honeyloupe" today (appears to be a honeydew/cantaloupe hybrid) and it was delicious!

As long as you stay in your set Spark ranges I think it would be OK to eat watermelon everyday. If eating fruit helps control your sweet tooth then I see that as a good thing. Fruit does have a lot of sugar in it, but it also has fiber and vitamins.
And I have found that labeling food as good or bad is defeating. Sure there are some things that we might want to limit, but no food is good or bad. Chocolate is high in antioxidants, especially dark chocolate.

I've recently gotten on a huge watermelon kick in the mornings and it is so fresh in my grocery right now that I have tons of it at my disposal. It's the healthiest way I've found to satisfy my sweet tooth.
I'm slowly getting more and more "into" nutrition, but when it gets beyond "fruits and veggies good, processed carbs and chocolate bad" I start to make too many generalizations. I know many fruits have high (unprocessed) sugar content or might not be great for me to be eating tons and tons of. Should there be a limit I set on foods ilke this or is something with such high water content one of those "you can't over do it" types of foods?
