I liked to brown venison on both sides...... then cook it in the pressure cooker to make it tender

Karen, That sounds awesome! Today I am opting for a crockpot venison meal... (I work 1pm to 10pm today) I have a medium roast in the crockpot with sliced onions, a red, yellow and green bell pepper, and a carton of cherry tomatos. I added a couple crushed garlic cloves, a pinch of cayenne. The idea is to shred the meat up later (after it has cooked) and make fajitas with the meat and peppers and onions! Yum!

I tried a new recipe from Sparkrecipes last week; it was super yummy. Slice tons of onions, and saute them in a bit of olive oil. Lay the venison steaks right on top of the onions, flip them after about 4 minutes, deglaze the pan with worcestershire (sp?) sauce. Stir before serving. Simple and succulent.

Thanks! That sounds great for the ribs! The last deer he got (a few years ago), we tried to grill them, however they became rather tough! Thanks everyone, I will be checking out all these recipes!

I made venison ribs last Christmas in the oven. I laid them in a roasting pan over potaoes, onions, and celery, added a bottle of dark, mexican beer, covered and braised (?) in a 200 F oven for 12 hours. They came out tender and falling off the bone.

I love the flavor of venison also, so I use just pepper and a little granulated garlic on steaks. Sunday I used very thinly sliced venison steaks in paninis with caramelized onions, so delicious! Stew is excellent, but I would say the simpler the recipe, the better. When growing up my Mom just sautéed the meat in butter. I've never soaked or marinated the meat.

I would use a moderate quality balsamic, white balsamic, or red wine vinegar, because IMHO, it adds considerably more flavor. :)

I love to cook with venison because it is so lean. My dad hunted a lot and my mother always marinated the venison before cooking it. Then it tasted like really lean beef. The most important part of the marinade is the vinegar. I usually use vinegar and water and whatever spices I want. Marinade in the refrigerator over night. Do not cook in the marinade. I especially like to cook a venison roast in a crock pot.

I'm kind of a hipocrite because I don't believe in killing defenseless animals, but I love to eat venison. :)

I found these marinade recipes on line. As I said, the vinegar is the important thing.

WILD GAME MARINADES
Game animals lead active lives. As a result, their muscles are relatively lean. This makes
game meat drier than domestic meat. For this reason, it is important to use cooking methods
that add juiciness and flavor to the drier cuts of game meat. Game meat is generally cooked
the same way as a similar cut of lean beef or poultry.

MARINADES
Marinades can tenderize, enhance or disguise game flavors to suite your taste. Cover
meat with one of the following marinades and allow to stand in the refrigerator (34E- 40EF) at
least 24 hours. Broil, roast, or braise.
Note: Marinades should not be used on the cooked meat unless they are brought to a
rolling boil for 3 minutes to kill any bacteria which may be in them.

Marinade
2 cups vinegar
2 cups water

Garlic, salt, and pepper to taste and equal parts of Worcestershire sauce and
two of your favorite steak sauces.

Many, many different ways.

1. If you have never had it before try it with tenderloin first. Take tenderloin and wrap bacon around it, cover with foil and throw on the grill.
2. Mix ground venison in Chilli, Spaghetti
3. If you want to try hamburgers, since deer has no fat you need to mix some ground beef with ground venison so it holds together on a grill.

I've heard of people using buttermilk to kill the taste of duck. But never seen it used with venison. It might be alright, but then again I like the taste if venison.

Take the tenderloins and cook them in butter with onions, garlic, salt and pepper... serve over rice... YUM!!!!

Cook it in the crock pot. You can make some low fat gravy, use cream of mushroom soup. Or cook it in beef broth with veggies and make a stew

I haven't had venison in a while--the last time I did, I wasn't worried about my fat intake so I cooked the steaks in heavy cream, butter and red wine.
Seriously, venison is lean, and needs to be trimmed of visible fat or it tastes gamey. It cooks quickly and can become tough. Since we are on SP, I am not going to recommend wrapping it in bacon! emoticon
I would suggest slow cooker stews, or pressure cooking to keep the moisture content up and making it tender. Seasonings that work for lamb or beef will work well for venison.

As a vegetarian, I don't eat anything like that, but my brother got a deer and gave some to my sister. She said for Christmas dinner,she was going to make a roast in the crockpot with veggies with some of it.

Whatever you make with beef, you can make with venison.
Venison stew(my personal favorite)
Venison loaf(with ground venison)
Venison chilli
Venison spaghetti
Venison stroganoff
Venison stir-fry

Don't make me go all Benjamin Buford Bleu on you! LOL!

If you go to church, if you know of a family in need who enjoys venison, you can always give some up. :)

for steaks you can either BBQ or cut into strips and stir fry with veggies - always great!
for roasts you can put either in the oven or in a crock pot both with great results!

It is leaner than beef so if you're BBQing just keep an eye on them as they will be done sooner than a beef steak would.

My husband got a deer.. we have about 75 lbs of deer meat in the freezer now. Any good recipe ideas? I know deer is leaner than beef.....
