The cholesterol in animals has very little, if any, relationship to dietary cholesterol. Egg yolks and leaner cuts of red meat can actually be some of the best foods to lower that number for your doctor. I'm feeling lazy at the moment, but I can come back with a boatload of sources and studies if you'd like.
In order to keep my daily cholesterol in check, I've been attempting to limit myself to having meat for one meal a day. My favorite dish is a veggie stir fry w/ginger. Today I tried a red bean curry and can't wait to start making my own.
