I am thinking about going 'unprocessed' for lent this year so I'm kinda in the same boat. I'm going to base my food on the Forks Over Knives cookbook. My plan-Soups w/ beans and lentils, lots of fresh fruits and roasted and steamed veggies. Good luck!
vegetable lasagna, roasted cauliflower, and sauteed kale have been grea finds for me. Love them now, didn't before becoming vegetarian. Seasonings and cream of mushroom, broccoli, and celery soups makes veggies taste delicious!!

Just make sure you're eating enough protein. I'm a vegetarian and get at least 75 grams per day without protein powder, protein bars or pre-made/frozen burgers or whatever. (Homemade is best!) You can do a lot with legumes - soups, veggie burgers, meatless meatballs - make big batches ahead of time, freeze in single portions for quick meals. Aim for at least 15 grams of protein for each meal.
I'm practically vegetarian as it is, without consciously trying... You do want to watch your protein to make sure you're not coming up short in that area. But, food-wise, there are so many delicious things, now that there are food blogs everywhere! If your supermarket stocks Yves brand deli meats, try those in a sandwich. Amazing. I love the peperoni, the bologna, and my husband (not even a vegetarian, eats a lot of meats) just bought the salami. I make a hamburger stew of potatoes, onion, water, salt and pepper, with Morningstar Farms grillers 'meat' crumbles that gets scarfed up by - again, that husband who eats meat all the time!

The main thing is to make sure you are getting enough protein. Eat lots of legumes, cheese, eggs, cottage cheese, nuts.

I'm thinking about going vegetarian (not vegan) for health, theological, and ethical reasons during Lent this year and wondered what tips people might have for me.
I'm thinking about taking a break from abstaining from meat on Sundays for a meal but haven't decided yet. Trying to think of different vegetarian dishes I know I like already (soups, salads, stir-fry) and I also want to think of new ones, too. I need several dishes that are easy to prepare and eat in a short amount of time for lunches.
Have you done anything like this before? What helped and what didn't? What worked? What did you discover along the way that would've been helpful to know before you started?
