If you're into Indian food, a couple of staple recipes for me; you can sub veg broth for chicken and soy yogurt for yogurt if you're vegan:
Baingan Bharta (eggplant)

Smoky Swiss Chard with Beans (instead of canadian bacon, you can use a dash of liquid smoke or a vegetarian bacon substitute; veg broth instead of chicken broth)

Mujadarrah--the BEST lentils; I like to fry 2 Tablespoons of whole cumin seeds in just 2 Tablespoons of extra virgin olive oil (rather than 6T) before adding onion slices to the skillet; this is really amazing with the basmati rice, but i cook the onions, rice, and lentils separately so I can better control portions of everything. I squeeze fresh lemon juice over the lentils before serving, sometimes crumble some feta as well.

Angel Hair with broccoli and garlic

1 lb angel hair pasta
1 pound broccoli cut into florets and cut up the stems too
4 cloves garlic choppe
1/4 cup olive oil
parmasan cheese

Boil pasta to box directions, when you add the pasta, add the broccoli to the same pot so they both cook together.
While pasta is cooking saute the garlic in about 1/4 cup of olive oil.

Drain the pasta and broccoli but keep some of the pasta water, about a 1/2 cup. Add the pasta and broccoli back to the pot, add in the garlic and olive oil and enough pasta water to keep it all moist. Add a little at a time so you don't end up with mushy pasta. You might not need a 1/2 cup , it just depends on how moist you like your pasta.

Serve with parmasan cheese. YUM.

One of my favorites is: Lentil loaf made w/ cereal & onion soup

I've already entered all the information into the SparkPeople recipe section, although I've noticed nobody has tried it yet since September when I entered it. It was given to me years ago by a 60ish woman who had been a vegetarian for years. My best friend is meat phobic, so I tried this, and I found that I really liked it and many of my meat eating friends liked it too. Kind of a nice alternative served with brown rice, or cous-cous and veggies.

Hope it comes out for you. The original recipe called for cornflakes and I swapped it out for bran flake.

I've just recently made the move from being a meat eater to a vegetarian. For years after I ate meat I just didn't feel right and got sick feeling after eating meat until a few weeks ago I omitted it all together after one night of being severely sick. Since switching over to vegetarianism I've felt better than I have in my entire life!!!

My favorite vegetarian on-the-go meal is an awesome lettuce wrap with all of my favorites in them. I'm looking for some more recipes so I can stock up. What's yours?
