only one serving of carrots today For tomorrow I cut up half a serving of cucumber, one celery stalk and a serving of baby carrots. As we speak they are sitting with about half a tablespoon of Good Seasons Classic Balsamic Vinaigrette, shook it up before putting it in the refrigerator. Should be ready for lunch tomorrow.
Today I made a Marinated Vegetable Salad for tomorrow. You have to let it set 24 hours. It will have all my veggies in it. Has corn, peas, green beans, red bell peppers, green bell peppers, and red onion. If I eat a cup and 1/2 tomorrow I won't have to eat any others! It made a pretty big bowl full so should be set for a few days!
I too need help to get my veggies in lately. I think I will check the recipe boads and make soups and stuff that gets them all in at once. Plus, don't some veggies have allot of carbs? Today I had abit of lettuce with my supper, and that was hard. For some reason as I am dieting, veggies don't taste as good as they used too. Isn't that weird?
I would like to join in this challenge. Perhaps it will help me to eat more vegetables. That is a weakness for me, I seem to do OK with fruit but do have a problem getting in my vegetables. Today I did not eat any so tomorrow I will do much better.
I was bad... all I had for veggies was the onion on my burger and hot dogs, and the tomato on my burger. oh, and I had a spicy bean burrito with salsa. (much spicier than I'm used to, but good!)
this week I'll do better. I bought about $15 worth of groceries - tuna, some veggie soup, lowfat yogurt, a couple different veggies for a stir fry, a box of high fiber cereal, some turkey deli meat, etc. I may not do as good as I should on the veggies, but I'll at least eat better this week.
I've never really paid attention to my sodium intake, but I guess I really should. I always just figured I drank enough water to flush it out anyway (but I put salt on just about everything). Maybe I'll just buy a little one to try it out. Thanks for the tip.
Yesterday I ate lettuce as my veggies (sorry). I put lettuce and tomato (not a veggie, but close), and had some caesar salad too. I still really want to count pickles though because I eat those almost every day LOL.
I like the taste of V8. It may be an acquired taste, but I've always liked it. I haven't always like broccoli and cauliflower, but you learn. If you are watching your sodium intake, then you need to becareful with V8, one can has 880 mg of sodium.

I've never had V8. It always seemed just icky looking to me. Does it really taste good? That would be a good way to get in some extra veggies. I don't even know what I'm going to do for veggies today. I brought my lunch, but it's just lean cuisine meals. Maybe I can pick up a salad on the way to my friend's house this evening? Can pickles count as a veggie?
yeah, the low sodium tastes like nasty tomato soup. i always end up spitting it out.
had... arugula, endive, spinach, romaine, red/green leaf, boston bibb and kale (all baby versions cuz they taste better) with cherry tomatos, strawberries, radishes, baby carrots, celery, apple and four different bell peppers.
i like color and variety in my salads.

Is it too late to join your challenge? I made a pledge to myself to add in veggies to my diet until I was up to the recommended amount, and I haven't been able to get it in there. I'm seeking motivation, and I think this challenge would be a good help.
v8s alright... i only like the spicy hot, picante and lemon ones. the others taste funny.
i have a huge salad twice a day with romaine, spinach, red or green leaf, iceberg, arugula, endive and kale. i add stuff into it based on what i feel like - baby carrots, cherry tomatos, cucumbers, radishes, etc. or raspberries, strawberries, apples, etc. and i have four veggies with dinner, usually.
i grew up in a house with a 6 and a half acre yard, so a third of that in the front was for fruit trees and berry bushes, plus we had wild berry bushes. and another roughly half of what was left in the front was for veggies, and then in the back we had an herb garden. the only veggie i will NOT eat, is eggplant. i'll eat anything else.
We had leftover grilled zucchini, mushrooms and chicken from yesterday, so I put those into a salad with romaine, red leaf lettuce, cucumbers, carrots and strawberries. That was around 4-5 servings already.
