1 pound lima beans
6 carrots, chopped
1 leek, bulb only, chopped
2 cloves garlic chopped
3 stalks celery, chopped
4 cups vegetable broth
4 cups water
2 tablespoons olive oil

*** if using dry lima beans , boil 4 cups water and add lima beans for 5 minutes then shut off heat and let sit 2 hours to soften. then continue with recipe***

In a soup pot, saute vegetables in olive oil until onions and celery are translucent. Add lima beans, and saute for another 2 to 3 minutes.

Add vegetable broth to the sauteed vegetables and beans. Add 4 cups water, and allow soup to simmer low flame for 1 to 1 1/2 hours.

I usually prepare them with a caramelized onion and tomato base with garlic, potatoes (with turmeric), and salt/pepper to taste :) Simple and tasty!

Have a lot of bags of uncooked Lima beans I need recipes that are vegan soups are okay but would like to branch out of soups. Thanks :)
