why not do most of your prep on weekends? That's how I do it. Prep the main part of the meal and either put it in the fridge or freezer. The only thing I prep on the day is a salad or veggie.
I meal plan late friday night, shop saturday and prepare sunday.
Since i know you do not eat like I do (vegan Raw), it is hard for me to recommend dishes. Why not look at what SP suggests and choose ones you would like to try. Open recipe books and look for things that you like.
