i remember my mom doing it w/a spoon but i think i saw tyler florence do it w/a knife but i would be afraid it will go thru the skin

You dont tear the skin, and lay it back over, so the butter is trapped.

Hmmm ok! Thanks!! I just don't know how to make the "pockets" to put the butter in. If I make a small slit I'm assuming the butter will ooze out?

Just pulling on the skin firmly should seperate it, use a rounded spoon if it isn't so you dont tear it.

Use a small sharp knife to cut the meat open, or even meat/kitchen scissors if you have them.

Hi All-
Quick turkey question. It is my first time making a turkey and the recipe I am following it says separate the skin from the breast and make pockets and put butter in the pockets.
What is the easiest/correct way to do this???
