This is a recipe i tried on a limb not really thinking it would work out, but it did :) I was trying to find something to put on my toast this morning and i was thinking jam,but i refuse to eat something with so much sugar, i had some strawberries and blueberries in the fridge, so i tried this.
4 strawberries cut into tiny squares about 7 blueberries chopped in half 1 tbsp juice (i used diet v8, only 10 cal per 8 oz!) 1/2 tsp vanilla extract
Put all the ingredients in a frying pan and mix together, Let is simmer on medium heat (stirring often) until it thickens like a jam. (it does stay a tiny bit thinner than jam, but spreads on toast fine.)
Then I spread it on a piece of wheat bread. yum.
