Sounds delicious. I do roast my broccoli with garlic, salt, pepper and olive oil but haven't added the lemon juice or pine nuts before. I'll have to give that a try! And everything is better with some parmesan added! Thanks for the ideas!
My beautiful daughter-in-law made this for Easter dinner today and I thought I should share it.
Preheat oven to 425˚
Cut broccoli down into trees. Toss with olive oil. Lay out in a single layer on a baking sheet and add a light sprinkle of salt & pepper. Bake for 10 min. Slice 3 cloves of garlic and a dash of olive oil and soften in mike for 30 sec. Remove broccoli from oven after 10 minutes and add sliced garlic and bake another 10 min. When the broccoli is finished cooking, toss with a 1/2 lemon, juice and zest, 1/4 cup toasted pine nuts and a sprinkle of parmesan cheese. Enjoy!
