I have been dong this too especially for breakfast and lunch. I try to keep in mind what hubby likes and don't for dinner. Sometimes I end up fixing four veggies to satisfy him and I just fix single serves so not to have a lot of different veggies that won't get eaten later. It has worked out great for us.
