I've never had luck with the diet forms of hot cocoa either. I think they taste disguisting and I always feel guilty about putting the chemicals in my body. I usually just drink the regular. I find rounly 120 calories to fit into my meal plan just fine and the taste to be more satisfying. Lately I've just started making my own hot cocoa mix so I know exactly what's in it.
I have struggled with it mixing right too. So I don't use it anymore. I found another swiss miss that I use instead. It is 10 calories more but it mixes fine. I love it with some non fat milk and some sugar free caramel syrup.

I can never get it to mix up right... it never dissolves?
I boil water on the stove, and stir as I am adding it... what am I doing wrong?

About a month ago Sam's (I know... you would think I live there) was sampling the Swiss Miss Diet Hot Chocolate and they added some Vanilla and Almond extract. I don't know about the added calories but the combination of extracts made the hot chocolate even better.
