Sounds good! I don`t like raisins so will prob omit or sub craisins.....I make a flax/bran/carrot muffin that is yummy and so very healthy! The recipe is on the back Of Bob`s Red Mill ground flax seed.

You won't be sorry. I got the original recipe from Runner's World but I changed the raisins to golden raisins, decreased the cooking time by 5 minutes, upped the sweet potatos, and used the white whole wheat flour. Also I took out nutmeg--that just made them too spicy i think. Let me know if you like them. Happy NYE.

Sounds delicious. Seems like a good way to have a moist vegan muffin ... and my better half has been wanting some options like this. I may just give it a try.

I've been refining a recipe of no fat added sweet potato muffins and hit on the eureka muffin this weekend by adding a few walnuts. It's moist and delicious and I eat one for breakfast and one for lunch with a homemade soup. Stir together in large bowl: 2 cups King Arthur's White Wheat flour 1/2 cup sugar 1 tbs. baking powder 1/2 tsp baking soda 1/2 tsp salt 1 tsp cinammon Add: 1/2 cup golden raisins 1/2 cup water 2 cups mashed sweet potatos (I microwave 2 medium sweet potatoes in the microwave 3.5 minutes on one side, then microwave 3.5 minutes on the other, then cool down) 1 tsp vanilla 1/4 chopped walnuts Bake at 375 degrees in muffin pan for 20 minutes for 12 muffins. I store these in a ziplock bag in the refrigerator. I get the King Arthur's white wheat flour at my grocery store. It's whole wheat albino flour without the bitter flavor or coarse texture of regular whole wheat.
