I slice sweet potatoes into fries, put them into a ziploc baggie, drizzle in a bit of olive oil, and shake them up with some combination of:
salt pepper oregano basil italian seasoning garlic salt garlic power sugar (just a smidge) crushed red pepper paprika
It's just adding what you're in the mood for in reasonable amounts! Pour onto sprayed foil on baking sheet. Bake at 425 till desired texture. Will need to turn once. Yum!

Love Sweet Potatoes. Love them done in the oven. I like to cook them long and slow to concentrate the flavor. I will try cinnamon and nutmeg on them, honey sounds good to. Has any one tried other spices on them?

I saw something on the View today that I want to try Butternut Squash Fries instead of sweet-potato. Prepare it the same way but make sure you blot the moisture from the squash fries before they go in the oven. I want to try ASAP. You can find recipe on the View website
Cut up 1 to 2 medium sized sweet potatoes into fries. bake in oven at 350 degrees until tender about 25 minutes. About 5 minutes before you take out sprinkle cinnamon and nutmeg on them. HMMMMMMMMMMMMM GOOD.
