A friend of mine makes a healthy Sillgratin recipe. She parboils potatoes and "steaks" of cauliflower instead of just using potatoes, and has reduced the butter to several tablespoons rather than a stick.
She does a great cod, simply replacing the cream in the sauce with low fat sour cream or nonfat half & half cut with chicken stock.
If you explained which recipes you wanted modified, I bet it would be easier to give suggestions.
