I fear there would be no disguising olives in anything, in this house, either! Out of four inhabitants, I'm the only person who would willingly eat green olives.
*laughs* I would taste them as I totally loathe the taste, texture and smell of the nasty things!
capers would be my suggestion too, or pickled mini peppers

Capers is a good option, but really a ragu is a pretty strongly flavored sauce and if the olives are chopped there's a decent chance he won't even really notice them.
My husband actually requested I make a recipe he got from a workmate...which is rare. Unfortunately, the recipe lists chopped green olives as a major ingredient and I don't think he read that far. He doesn't like any kind of olives. This is an Italian "ragu" dish, made with carrots, celery, tomato juice and meat stock with the shredded braised meat...over thick pasta. I'm lost for what to sub for the olives, or if I should just leave 'em out. Any suggestions?
