I will try to implement them and continue to improve on this because it is a lifelong thing and I know it won't happen overnight.

I know what you mean! I struggle with this sometimes too. Especially, when my days are longer than usual, out of routine, and on top I am stressed out. This regularly throws me overboard, but I got great tips from many other sparkers to help with it.
If the water doesn't work, maybe you can eat something better than the swiss roll? Like a string cheese, or some cut fruit or veggies? While you munch on that, you can walk away and start distracting yourself until the craving goes away.
I also noticed that little prepackaged treats (only chocolate!! I stay away from prepackaged salty stuff like chips and crackers) help me to stay with one portion instead of eating the whole bag. I need a little chocolate once in a while, so I pick stuff like ghirardelli mini squares with raspberry filling. They say 4 squares is a serving (200 cal), but I try to stay with 2 because then it's a 100 cal treat. :) They taste fantastic, and often satisfy my chocolate craving. Maybe that's something that could help you?
Don't worry about failing once in a while. We all do. I still struggle with it my self too :)

Remember this post and just tell yourself no. You have to start somewhere .... If you don't want to eat it, don't eat it. I know that it sounds much easier said than done, but you can stop. I just recently stopped smoking cold turkey and I have quit drinking coffee (cold turkey too). I wasn't sure that I would be able to do it, but I did. I simply told myself no.

This question has probably been asked a thousand times but I'm going to ask anyway.

I am a HUGE emotional stress eater. I've tried drinking water and waiting 15 minutes but it doesn't seem to work.

In the past 8 to 10 months I've gained 20 lbs. do to this. I know that I'm doing it to myself and that that Swiss Cake Roll or ice cream wont solve my problems.

I've tried to just count to 10 and walk away but apparently, I have no will power and then I've already eaten whatever I've gotten my hands on.

I've tried keeping the foods out of the house but I feel like I'm making the rest of the family (dh and 3 kids) suffer because I can't control myself.

Any and all advice would be very much appreciated.
