Thank you all for your replies! I liked the links to the websites-thank you! I ended up just making the vegetables with spices. I wanted to try the chickpeas, but my sister couldn't find them at store...
How about an Irish Stew made with chickpeas instead of lamb or beef?
A boiled dinner is also good as suggested...I make boiled red potaoes, steamed cabbage, and shrimp...dont know if you eat shrimp.

My family tradition involved a glazed corned beef (just mustard and brown sugar), which would be delicious on a veggie-protein (tempeh maybe?). You just brown it in the oven/broiler until it gets caramelly.
You can add more veggies to the boil as well- traditionally you boil the meat, cabbage and potatoes in one pot. Add peas, carrots, leeks, anything you want!
For the boil (to add some flavor) you could use the corned beef spices. Maybe par-boil the protein in there too (note: I've never boiled tempeh or tofu, so I have no idea if that would work)
Pickling spices: 1 Tbsp whole allspice berries 1 Tbsp whole mustard seeds (brown or yellow) 1 Tbsp coriander seeds 1 Tbsp red pepper flakes 1 Tbsp whole cloves 1 Tbsp whole black peppercorns 9 whole cardamom pods 6 large bay leaves, crumbled 2 teaspoons ground ginger 1/2 stick cinnamon
