I found this recipe I absolutely adored, for amazing pumpkin muffins. So I put it into the Spark recipe calculator and was horrified to find it was 244 calories each. But they were all harvesty-spicy goodness, and I wanted to find a fix. The supremely simple swap one-to-one of applesauce for the oil and raisins for the nuts dropped a whopping ONE HUNDRED calories out of each muffin. Unbelievable! I love the results, a fluffier, tasty muffin that's absolutely reasonable on a morning when oatmeal just doesn't appeal.
