I'm not sure why you'd need the butter and white wine... the thing you linked to says it has a "jalapeno dressing" so that must be why. I found some other stuff online that simplifies the recipe.... no "dressing" just a slice of jalapeno in with the cheese.
Try it out with using center-cut bacon, the brand I use is only 25 calories per slice, and it has less fat than regular bacon. Also I'm not a fan of doing this, but you could do lower fat cheese.
I just built it in the recipe builder using 6 large shrimp, 6 slices of center cut bacon (might even be able to do 3 slices cut in half, depending on how big the shrimp is), 1 jalapeno (sliced up it would be 6 slices), and a 1/2 cup of shredded jack cheese, and I got 336 calories total.
