hey dietrich, im happy u enjoyed the recipe.. i have reduced the frequency at which i eat these meals now a days. i am surprised at how much u weight u lost.. how long did it take u to lose all this?? help me out and the rest of us.. im currently at 188-189lbs.. i wanna be down to 168 by new years eve... what do u suggest..how much do u workout?? how often.??/

CookieMonster, your recipe sounds great! I also love this entree, but don't it too often becasue of the salt and added junk. Last night for dinner, I sprinkle my chicken breasts with fajita seasoning, topped with black beans and salsa (didn't measure anything) baked for about 30 minutes at 350. I ate it on a tortilla with a little sour cream and reduced fat cheese. It was very good and similar to this entree. You could serve over rice instead of on a tortilla. It was very simple.
Great big kisses back at you for this. This sounds right except that in the Weight Watchers entree, I think they use red beans (not kidney beans). Since I really like black beans, I think I'll try this version. It sounds very good!
I think this is the recipe for the Smart Ones Santa Fe Style Rice and Beans.. I love it myself.. You wont believe how many i can eat in week.. i eat at least two a day for lunch and dinner and dont get sick of 'em. i do however get sick of the price that i pay for each.. n e way, i found this recipe on this link...its really good. i'll post it here also in case you are unable to click on the link..
SANTA FE BEANS AND RICE
2 cups cooked white rice 1 (15 ounce) can black beans, rinsed and drained 1 cup frozen corn 1 (10 ounce) can of diced Mexican-style tomatoes (like Rotel) 1 cup salsa 1 cup low-fat sour cream 2 cups shredded reduced-fat Mexican cheese blend, divided use 1 small red onion, chopped 1 (2 1/4 ounce) can sliced ripe olives, drained
Preheat oven to 350 degrees F. Grease a 2-quart baking dish.
In a large bowl, combine beans, corn, tomatoes, salsa, sour cream, 1 cup cheese and cooked rice. Season with salt and pepper. Transfer to prepared baking dish and top with onions and olives.
Bake uncovered for 30 minutes.
Sprinkle with remaining 1 cup cheese and bake 5-10 minutes longer until cheese is melted.
Not sure what the frozen entree is like, but Uncle Ben's makes a bagged rice that you microwave for 90 seconds. It's the pre-packaged/cooked kind that serves 2 or 4 I believe, I can't remember which. It's made with brown rice, corn, and black beans. I love it and keep it in my pantry for quick dinners. I top it with salsa, mix in some cooked chicken, and serve it with a side of veggies for a quick dinner. HTH even though it's not quite what you were looking for!
I enjoy Weight Watchers Sante Fe rice and beans frozen entree but I'm not crazy about the price tag during this economic downturn. This looks like it should be an easy recipe to copy and I'm certain I could make it healthier with the addition of brown rice. Does anyone have any ideas about how to make the sauce they cover the rice and beans in? I could even handle a spicier version. Any suggestions are welcome. Thanks!
