broccoli slaw- no lettuce at all i do a beet and carrot salad-- grate a couple beets and carrots- dress with pepper and a bit of olive oil i use kale, mustard greens, collards and swiss chard. You can use shredded kohl rabi or rutabaga or other turnips. I spiral cut zucchini and yellow squash. i shred/grate acorn squash or spaghetti squash. try parsnips. they are usually low priced. tomato and onion salad, cucumber and onion salad

I actually hate lettuce, so all of my salads are lettuce-less :)
I eat a lot of cucumber, tomato & onion with olive oil & vinegar. Or cucumber, a couple of chopped up kalamata olives, 1 ounce of feta cheese & greek vinaigrette. I also really like "chopped" salads with a bunch of different crunchy veggies - cuke, tomato, zucchini, carrots, raw mushroom, edamame, etc. I also like cucumber, carrots, chickpeas and light catalina dressing.

What about coleslaw, including using red and green cabbage
Mushroom salad with some spring onions and French Dressing
Potato Salad - add some finely chopped celery, parsley etc. to it
Mixed Bean Salad
Roast a variety of veges (potato, pumpkin, courgette, red onion, red and green bell peppers are good) cut them into pieces bit bigger than bite-sized) When cold, sprinkle some toasted sesame seeds and toss in a light vinaigrette dressing (balsamic is good).
Grated carrot and courgette and toss them in a little French Dressing
