You can turn your "page" private - on the right toward the top of your SparkPage there is an "Edit my sparkpage" option, and when you click that, a window opens from the top, and again on the right there is a list of options you can check off one of which is "set my page to private". I don't know if this makes the blog also completely private. I think old entries may still show up on search engines.

For privacy nothing beats offline.

I don't think so. I believe that Spark used to offer people a journal, but I don't see that option anymore.
