I "repurpose" by making big batches of things, eating one serving and freezing the rest in individual containers for future meals.

I also make enough for leftovers & re-purpose all the time. What immediately comes to mind is the corned beef and cabbage dinner I made with a few extra potatoes for St. Patrick's day. Took a couple of the potatoes with some beef & put in the food chopper. Next morning, DH & DS had corned beef hash with poached eggs.
Always making extra salmon or chicken to add to salad for next day's lunch. As others said, cuts down on food prep time.
I deliberately make "extra" just so that I'll have leftovers - this reduces my daily cooking chore time. Plus, some things (soups, stews) actually taste better the next day. So - one night's dinner becomes lunch for the next couple days.
Leftover veg get scrambled up with eggs for breakfast. Or thrown into a soup, stew, chili or casserole.

I don't like leftovers past two days, so I will use the as soon as possible.
We eat our left overs I know a lot of people that wouldn't think of doing that but sometimes it's better second time around and why throw away good food it's like throwing away money

I like leftovers! I also don't mind eating the same meal several times in a few days. For example if I make beef stew for dinner, I'll have it for dinner the next night and for lunch the rest of the week.
I usually roast a chicken on Sunday and use the leftovers throughout the week. Reheated with veggies for lunch, in a salad, chicken and veggie soup or in a sandwich Same thing with steak or roast.
I also like to add bits of leftover meat and veg to quinoa.
I know not everyone loves leftovers, but I'm a huge fan. I have no problem eating the same meal more than one day in a row. But I do also like to get creative and repurpose the meal into something different the next day. I had made a bean/corn/pepper/onion 'dip' recently, tossed with vinegar, greek yogurt, hot sauce, and salsa, and served it at a small gathering. I ended up having a smidge leftover, and the next morning I used that as my base for an egg white omelet, tossed with diced chicken sausage..it was delicious! Also, just used some fresh chickpeas on a salad and have most of the can leftover..I'll be making baked chickpea patties with the rest to put on my salad tomorrow :)
