Good morning. Today will be tricky, a long school day, classes from 1 - 7:30 so how to arrange my diet today.

I'd best have a good lunch and bring tangerines and 1/4 cup of nuts to school for a snack...then a light snack when I get home? Let's see:

now: yogurt, banana, coffee
lunch: pouched eggs, toast, canadian bacon
@ school: tangerine, nuts
at night: chicken thigh & skinny cow cone

hmmm...I think that going to be my plan.

I blew it yesterday...though tiny strides. I had company over yesterday for a drink and appetizers. This is very rare for me these days, so no worries about this over time, but having this take place on day 3...well poop.

The good news. I ate a regular lunch rather than skipping for the evening and when the guest left I packed up the cheese, salami and crackers and went to dinner, keeping it meatless. Trouble I was a bit tipsy off the 2 drinks I had and over ate.

I must say though that previously I would have polished off all the appetizers, and made a full meal after...so cutting calories did take place.

I only have drinks perhaps 4 times a year these days so no worries.

~~~Tonight's Makeover:

Mashed potatoes out, mashed cauliflower in.

Cut up florets and boil them soft. Drain...and let them drain well, to a dry point. Place in blender, add 2 tablespoons of sour cream/or Greek yogurt, and garlic salt. Blend till smooth.

Now these are normally not warm enough so I heat them a little in the microwave before placing on the place...but the long draining time where they cool...really helps them from being runny, so worth the trouble.

Day 2 and I am thinking of starting another thread of sharing makeovers to food to share, and if your willing share your own!

Days ago I was having a taco salad made with beef, chili, chips, 1000 island, guacamole, gobs of cheese, sour cream, lettuce, and such. Today I remade this meal in a healthier way.

A toasted large flour tortilla (going tostada style), re fried bean (zero fat), strips of saute onions and red pepper, olives, tomato, 1oz of chesse, salsa, lettuce and I will use 1 tbls of 1000 island.

650 ish calories, perhaps high, but much better than before!
