if i know i am going to be busy the next few days i try and make sure i have beans and rice [separate, not already a dish] ready to go. so all i need to do is scoop some rice into a bowl, toss some beans on top, add some frozen veggies and toss in the microwave until heated through. then i pour in some sauce [ i like keeping things like thai kitchen chili and ginger sauce, or teriyaki or peanut sauce on hand] and i have a meal. if it was a sudden lack of time, i will cook up some orzo then add frozen veggies and beans [or i will add in red lentils to cook with the orzo], drain, then add the sauce.

One of my go-to meals is a MorningStar (Grillers Prime) burger patty wrapped in lettuce with any other topping I have on hand such as tomatoes, onions or avocado. I'll also put a dollop of hummus or veganaise on there. This goes well with any kind of veggie! My favorites are steamed broccolil, kale or asparagus!

Don't know if this qualifies as a meal or not, but it's super easy, super yummy, and addicting. I'm not vegan, but the food is. :)
Chop fresh asparagus, red onions, and portabella mushrooms. Baby bellas are best, but you can use regular portabellas if you remove the gills (the gills make them all mushy). Sautee in a bit of olive oil, add some seasoned salt (or other seasonings to taste.) Quick, easy, and delicious.

I love eating vegan! One of my favorite recipes is a quick veggie saute:
1 tbsp of extra olive oil 2 tbsp of chopped red onins 4 tbsp of sliced tomatoes .5 cup of frozen kale 1/2 piece of Tofurky sausage 2 tbsp of hummus 1-2 dashes of Tabasco Salt and pepper to taste
1. Microwave the kale to thaw. 2. Add the olive oil in a nonstick pan over medium heat for 2-3 minutes. 3. Slice the Tofurky sausage and add to the pan 4. Add the chopped onions and tomatoes. 5. Throw in the kale when thawed. 6. Increase the heat, and stir using a fork for 5-7 minutes. 7. Place dish in a plate when the onions have a slight caramel color. 8. Add the Tabasco and salt and pepper. 9. Serve with the hummus and enjoy!
