I made taco soup in my crockpot. I use tomatoes, corn, peppers ,red beans chicken, garlic powder, chili powder, cayenne pepper and salas. Have 3 containers left over for the freezer. I use my crockpot a lot to make soups and freeze the left overs.

during the cold weather I love making bean based stews loaded with chicken broth , carrots, celery, onions, bell peppers, tomatoes, a variety of beans,and skinless chicken thighs. It takes better the 2nd day and freezes well. So the hour it takes to cook, ends up saving me a lot of time later on. And it's a 1 pot meal.

Today was super busy and left a little time at the end of the day at home. Fortunately, I had pasta already cooked, roasted veggies and some Trader Joe's meatballs. Mix, microwave and even add a glass of wine with the calories left in the day. Voila!
