I love the taste of them plain sometimes. But usually a little butter (tiny bit for texture mostly), black pepper, chives, garlic and blue or pepperjack cheese. or whatever cheese is in the fridge. or a little parmesan and herbs.

This isn't a potato per se, but if you are looking to have something potato-like that has a bit more flavor built in, maybe try a yam. Yams (I get the ruby reds) to me have more flavor than a sweet potato or a regular potato.
They can also take on sweet or savory depending on your preference & the spices, if any, that you add.
I find all I need is a bit of salt as they are so flavorful to begin with.
And I will have to try that feta! What a great idea!
I usually put a little light sour cream and a little Brummel and Brown on mine, but, that's just me dressing up a potato with a little stuff to make it taste better...the key being that I use just a little bit of these things and they are pretty much just there for the yummy factor and not the health factor.
If you wanted to add healthy fat, you could cut up the potatoes, toss them in a little olive oil (and add some seasonings) and put them in the oven to bake.

Feta cheese on a potato. That sounds awesome, and I've never thought of that. I'm trying it next time!
Personally I use unsalted organic real butter (If I can find pastured even better) - there's absolutely nothing wrong with using real butter; it's way better than the fake margarines and we neeed to consume good healthy fats, and there's nothing better than real butter on a potato!

the Non-fat plain greek yogurt has the same consistency and (to me) a similar taste as sour cream. Salsa is also a great topper. :)

I often put reduced sour cream on my lunch time potato. Just discovered that feta cheese is low in fat and has some protein. What else do people put on there as a healthy fat? I was thinking avocado....I always have some greens with it but need a butter substitute....
